Ingredients
- 500g beef mince
- 1 garlic clove
- 1/2 onion, diced
- 1 carrot, diced
- 1 potato, diced
Salsa Ingredients
- 3 tomatoes
- 1 garlic clove
- 1/4 onion
- 2 Guajillo chillies
- 1 pinch oregano
- Salt & pepper to taste
Cooking Instructions
- Cook the chillies for the salsa & remove the seeds.
- Blend all the salsa ingredients & add salt (be mindful not to make it too salty, as we’ll season the meat separately with salt & pepper).
- Dice the onion, carrot, & potato.
- Pan-fry the beef & season with garlic, salt & pepper.
- Add the onion, potatoes & carrots.
- After 10 minutes, add the salsa and cook for 25 minutes (check for salt).
- Check if the potatoes are cooked, then it’s ready to serve.
